Long days lazing on the beach, basking in the sun and smelling the beautiful fresh, salty air – there is nothing more exquisite!
There are so many things to love about summer and nothing reflects summer more then a delicious, decadent cocktail.
Here are a few of my favourites to inspire and indulge in this summer.
1. Lychee Martini
Ingredients
5mL Paraiso Lychee Liqueur
45mL Stolichnaya Vodka
15mL lychee juice
5mL lemon juice
Method
Add ingredients to cocktail shaker
Shake with ice and fine strain into martini glass
Garnish with a lychee
2. Cosmopolitan
Ingredients
45ml Smirnoff Red Vodka
15ml Triple sec
10ml freshly squeezed lime juice
30ml cranberry juice
Orange zest, julienned or lime wedge, to garnish
Cubed ice
Method
Combine all ingredients in a cocktail shaker or mason jar
Add cubed ice and shake for 10 – 15 seconds
Strain into martini glass
Garnish with finely julienned orange zest or a lime wedge
3. Raspberry Iced Tea
Ingredients
3 raspberry and peach flavoured teabags
3 cups boiling water
2 cups lemonade, chilled
1 cup apple juice, chilled
1/2 cup frozen raspberries
1/2 cup frozen blueberries
Ice cubes, to serve
Method
Place teabags in a large, heatproof jug. Add boiling water. Set aside for 5 minutes to infuse. Remove teabags. Refrigerate for 30 minutes
Add lemonade, apple juice, raspberries and blueberries to jug. Stir to combine. Add ice. Serve.
4. Sparkling Rose Punch
Ingredients
peaches, sliced
1 bottle (750 ml) rose wine, chilled
2 cups sparkling lemonade (we used Lorina lemonade), chilled
2 tablespoons black-raspberry liqueur (or Chambord)
27 raspberries
Method
Place half the peach slices in ice cube trays, one slice per compartment; add water, and freeze.
Mix wine, lemonade, and liqueur in punch bowl. Add peach slices and some of the peach ice cubes.
To serve, place remaining peach ice cubes in cups, and ladle in the punch; garnish with raspberries.
